Shrimp and Veggie Skewers with Caesar Dipping Sauce Recipe

Ingredients

  • 1 cup Skinnygirl™ Caesar Dressing, divided
  • ½ cup nonfat plain Greek yogurt
  • ½ to 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 pound extra large shrimp, peeled and deveined
  • 1 pint grape tomatoes
  • 2 small zucchini, cut into ½-inch thick slices

Directions

  1. Combine ½ cup Skinnygirl™ Caesar Dressing with yogurt and lemon zest.
  2. Combine remaining ½ cup Caesar Dressing with lemon juice. Pour half over shrimp and half over vegetables and toss to coat.
  3. Let stand 15 to 30 minutes. Skewer shrimp and vegetables. Grill or broil until done.
  4. Serve shrimp and vegetables with Dressing/yogurt mixture for dipping.
