Smoked Salmon Caesar Roll Ups Recipe

Ingredients

  • ¼ cup low fat cottage cheese
  • ¼ cup whipped cream cheese
  • 1 tablespoon Skinnygirl Classic Caesar Dressing with Avocado Oil
  • 1 teaspoon chopped capers
  • 1 teaspoon chopped dill
  • ¼ teaspoon lemon zest
  • 4 ounces smoked salmon
  • ¼ cup thinly sliced cucumber
  • ¼ cup thinly sliced red onion

Directions

  1. Combine cottage cheese, cream cheese and Skinnygirl Classic Caesar Dressing with Avocado Oil and blend using an immersion blender or mash well with fork. Stir in capers, dill and lemon zest.
  2. Spread cottage cheese mixture over salmon and layer cucumber and red onion slices on top. Roll up and serve.
