Air Fryer Balsamic Salmon and Asparagus with Cauliflower Rice Recipe

Ingredients

  • 2 salmon fillets (about 6 oz. each)
  • 1/4 cup plus 2 tablespoons Skinnygirl Zesty Balsamic Dressing with Avocado Oil, divided
  • 8 ounces asparagus, trimmed
  • 1 10 package (10 oz.) frozen riced cauliflower, prepared according to package directions
  • 1 teaspoon butter

Directions

  1. Pour 2 tablespoons Skinnygirl Zesty Balsamic Dressing with Avocado Oil over salmon and marinate for 15 minutes. Remove salmon from marinade and arrange salmon and asparagus in air fryer basket.
  2. Set air fryer to 375°F and cook 6 to 8 minutes or until salmon is desired doneness and asparagus are tender. Brush salmon with additional 2 tablespoons dressing halfway through cooking.
  3. Stir butter and remaining 2 tablespoons dressing into riced cauliflower and season with salt and pepper.
  4. Serve salmon and asparagus with riced cauliflower.
