Chicken Caesar Salad Flatbread Recipe

Ingredients

  • 12 ounces boneless, skinless chicken breast halves, cut into 1/2-inch pieces
  • ¾ cup Skinnygirl™ Caesar Dressing, divided
  • 2 lavash flatbreads or naan (preferably whole grain)
  • 2 plum tomatoes, thinly sliced
  • ¼ cup thinly sliced red onion
  • 1 (4 oz.) ball fresh mozzarella or burrata, torn into pieces
  • 2 cups torn romaine lettuce
  • 1/4 cup shaved Parmesan cheese

Directions

  1. Preheat oven to 425°F. Toss chicken with ¼ cup Skinnygirl™ Caesar Dressing.
  2. Heat large nonstick skillet over medium heat. Add chicken and cook 6 minutes, stirring occasionally, until done.
  3. Arrange lavash on baking sheet. Bake 5 minutes. Remove from oven, flip lavash over then evenly spread 2 tablespoons Caesar Dressing over each lavash. Evenly top each lavash with sliced tomato, red onion, chicken and burrata.
  4. Bake 8 minutes or until cheese is just melted.
  5. Toss romaine with remaining ¼ cup Caesar Dressing. Top flatbreads with romaine and shaved Parmesan.

 

Tips

You can use leftover cooked chicken. Toss cooked chicken with Dressing then skip the sauté step.
