Combine chicken with ¼ cup Skinnygirl Chipotle Ranch Dressing. Spread chicken mixture evenly over 2 tortillas. Top with tomato, green onion and cheese. Then top with remaining tortillas.
Spray large nonstick skillet with cooking spray and heat over medium-high heat. Cook quesadillas, one at a time, turning once, 2 minutes or until cheese is melted.
While quesadillas are cooking, combine remaining ¼ cup Dressing with yogurt.
Cut quesadillas into wedges, serve with Dressing mixture and garnish with chopped tomatoes and green onion, if desired.
