Chipotle Chicken and Cheese Quesadillas Recipe

  • 1 cup shredded cooked chicken
  • 1/2 cup Skinnygirl™ Chipotle Ranch Dressing, divided
  • 1 ½ cups shredded Mexican blend cheese
  • 4 large flour tortillas
  • 1 cup chopped tomato
  • 3 green onions, sliced
  • ¼ cup nonfat plain Greek yogurt
  • Nonstick cooking spray


  1. Combine chicken with ¼ cup Skinnygirl Chipotle Ranch Dressing. Spread chicken mixture evenly over 2 tortillas. Top with tomato, green onion and cheese. Then top with remaining tortillas.
  2. Spray large nonstick skillet with cooking spray and heat over medium-high heat. Cook quesadillas, one at a time, turning once, 2 minutes or until cheese is melted.
  3. While quesadillas are cooking, combine remaining ¼ cup Dressing with yogurt.
  4. Cut quesadillas into wedges, serve with Dressing mixture and garnish with chopped tomatoes and green onion, if desired.
