Mash avocado and stir in 1 tablespoon Skinnygirl Garden Ranch Dressing with Avocado Oil and lime juice. Season with salt and pepper. Beat eggs with remaining 1 tablespoon Dressing. Melt butter in a small nonstick skillet over medium heat. Add eggs and cook about 8 minutes, stirring often.
Spoon eggs into lettuce leaves and top with mashed avocado. Top with pickled onions if desired and drizzle with additional Dressing.
