¾ cup Skinny Girl™ Asian Sesame Ginger Dressing, divided 1 pound extra large shrimp, peeled and deveined 1 large red bell pepper, cut into1–inchpieces 2 cups freshpineapple chunks ½ cup pineapple juice 1 teaspoon cornstarch 3 green onions, chopped
Preheat oven to 425F.Line rimmed baking sheet with parchment paper.Combine shrimpand ¼ cupSkinny Girl Asian Sesame Ginger Dressingand toss to coat. Let stand 5 minutes.
Add peppers and pineapple to shrimpmixture and toss to coat.
Arrange shrimp and veggies in a single layer on prepared baking sheet.
Bake 15 minutes or until shrimp turn pink and peppers are tender–crisp.
Meanwhile, combine remainingDressing,pineapple juice and cornstarch in small saucepan. Bring to a boil and simmer 1 minute or until slightly thickened.
Sprinkle shrimp with green onion, serve with rice and dressing mixture.
