Skillet Balsamic Chicken Recipe

Yield: 4 servings


4 boneless, skinless chicken breast halves
1/2 cup Skinnygirl™ Balsamic Dressing
2 roasted red peppers, halved
4 slices provolone or fresh mozzarella
Fresh basil leaves


  1. Pour Skinnygirl Balsamic Dressing over chicken and marinate 30 minutes to 3 hours.
    Remove chicken from Dressing.
  2. Heat a large nonstick skillet over medium high heat and cook chicken 12 minutes, turning once, or until chicken is thoroughly cooked.
  3. Top each chicken breast with one half of a pepper and 1 slice of provolone. Cover and cook 2 minutes or until cheese is melted. Top with fresh basil leaves.
