Smashed Cucumber Salad Recipe

Ingredients

4 mini cucumbers or 1 large seedless cucumber (about 1 lb.)
3/4 teaspoon salt

¼ cup Skinny Girl Asian Sesame Ginger Dressing

1 teaspoon chili garlic sauce

2 tablespoons chopped fresh cilantro

1 tablespoon toasted sesame seeds

Directions

  1. Using the back of your knife or rolling pin, smash cucumber gently until the skin cracks. Slice cucumbers in half then into slices.
  2. Toss cucumbers with salt and let stand 15 minutes. Rinse cucumbers under cool water and drain.
  3. Toss with remaining ingredients. Sprinkle with additional sesame seeds if desired.
