Season salmon with salt and pepper if desired.Pour ¼ cup Skinny Girl Asian Sesame Ginger Dressing over salmon fillets and let stand 10 minutes.
While salmon is marinating, lightly coat air fryerbasket with cooking spray.Arrange bok choy, cut sides up, in an even layer in air fryer basket. Brush with half of the remaining Dressing. Set air fryer to375°and cook3 minutes, then brush with remaining Dressing. Cook 2 to 3 minutes until bok choy is tender–crisp and leaves are crisp and slightly charred. Remove and keep warm.
Arrange salmon in a single layer in air fryer basket. Cook 7 to 8 minutes or until desired doneness.
Serve salmon with bok choy and sprinkle with green onion and toasted sesame seeds.
