Air Fryer Sesame Ginger Salmon and Bok Choy Recipe

Ingredients

4 (6 oz.) salmon fillets
½ cup Skinny Girl™ Asian Sesame Ginger Dressing, divided

4 (4 oz.) baby bok choy, sliced in half lengthwise

1 green onion, sliced

1 tablespoon toasted sesame seeds

Directions

  1. Season salmon with salt and pepper if desired. Pour ¼ cup Skinny Girl Asian Sesame Ginger Dressing over salmon fillets and let stand 10 minutes.
  2. While salmon is marinating, lightly coat air fryer basket with cooking spray. Arrange bok choy, cut sides up, in an even layer in air fryer basket. Brush with half of the remaining Dressing. Set air fryer to 375° and cook 3 minutes, then brush with remaining Dressing. Cook 2 to 3 minutes until bok choy is tendercrisp and leaves are crisp and slightly charred. Remove and keep warm.
  3. Arrange salmon in a single layer in air fryer basket. Cook 7 to 8 minutes or until desired doneness.
  4. Serve salmon with bok choy and sprinkle with green onion and toasted sesame seeds.
