Preheat air fryer to 400°F. Spray basket with nonstick cooking spray.
Coat shrimp with Skinnygirl Chipotle Ranch Dressing then dip in cornmeal, shaking off excess. Arrange half of shrimp in air fryer basket, leaving room around shrimp for air to circulate. Cook 6 minutes or until golden and crisp. Repeat with remaining shrimp.
Meanwhile, combine cole slaw with Dressing, lime juice and cilantro.
Serve shrimp and slaw in tortillas and top with your favorite taco toppings. Drizzle tacos with additional Dressing.
