Skinnygirl Apricot Mimosa Baked Apples Recipe

  1. Preheat oven to 350°. Core apples, being careful not to cut through to the bottom. Peel top 1/2 of apples. Arrange apples, peeled side up, in medium baking dish; set aside.
  2. Combine granola, pecans and cranberries in small bowl; stir in 1/3 cup Skinnygirl Preserves and butter. Evenly spoon mixture into apples, mounding on top. Melt remaining Skinnygirl Preserves and brush half on peeled parts of apples. Pour water around apples.
  3. Cover loosely with aluminum foil and bake 30 minutes.  Remove foil and bake 15 minutes or until apples are tender.   Remove from oven and brush apples again with remaining Skinnygirl Preserves. Serve, if desired, with a dollop of vanilla yogurt or fat free whipped topping.
